Chicken and Bacon Risotto

Serves 4



  1. Heat olive oil and butter in a large saucepan
  2. Add garlic, onion, bacon and cook for 3 minutes.
  3. Add chicken and continue to cook until just brown
  4. Stir in arborio rice and cook over medium heat for 5 minutes
  5. Add wine and simmer until liquid is absorbed.
  6. Begin adding stock, 1 cup at a time.
  7. Add button mushrooms
  8. Add the rest of the stock one cup at a time until absorbed
  9. When all stock has been absorbed, remove pan from heat
  10. Stir in cheese, parsley and pepper.
